I have to say I’m quite proud of these. You would never know they were gluten-free unless you were told. I decided to start experimenting with some of my old favorites, turning them into gluten-free recipes. This one worked very very well. It was adapted from a recipe in Martha Stewart’s Baking Handbook. Enjoy.

½ cup Earth Balance (or unsalted butter)

8 oz bittersweet chocolate

1 cup sugar

½ cup brown sugar

4 large eggs

1 tsp vanilla

½ cup white rice flour

¼ cup tapioca flour

½ tsp salt 

Pre heat oven to 350F. Oil an 8 inch square baking pan, then line with parchment paper.

Place butter and chocolate in double boiler to melt, stirring frequently. Once melted remove from heat and let cool to room temperature.

Stir in the sugar and whisk in one egg at a time, whisk in the vanilla. Gently fold in the flours and salt.

Pour into prepared pan and bake until cake tester comes out with only a few crumbs, about 35 minutes. Transfer to wire rack and cool.
