Sometimes things don’t work out the way you planned them. This dinner was one of them. I make my menu out a week at a time, from which I make my grocery list. Sometimes I miss a few things. Tonight I missed many things. I will give you the recipe how I made it, not what it called for. Luckily it turned out well, this was a yummy stew.
1 1/2 cups dried Great Northern Beans
1 1/2 cups dried garbonzo beans
5 cups water/broth
1 carrot
3 garlic cloves, chopped
3-4 tsp HerbN’ Renewal Soup and Stew seasoning (don’t bother you won’t find it, unless you live near Lexington, KY and know where the Liquor Barn is)
1 can diced tomatoes (14 oz)
2 Tbsp tomato paste
Throw it all in the slow cooker and cook on low for 8 hours. Season with salt and pepper before serving.

If you happen to live near Lexington….

If not try: 1Tbsp dried parsley, 1 tsp dried basil, 1/2 tsp thyme, 1 bay leaf.
What you might have also noticed is that the soup is called 3 Bean Cassoulet, and the recipe only has 2 beans, the third bean is suppose to be dried lima beans.

One thing I love about the fall, seasonal hard apple cider:

[...] my grocery shopping at Trader Joe’s and Whole Foods. Menu for the week: Saturday: Leftover 3 Bean Cassoulet Sunday: Roasted Chicken breasts with balsamic vinaigrette, roasted sweet potatoes, garlicky [...]
Kelly, thanks for another recipe that we can add to our Herb’n Renewal collection. If anyone not living near Lexington, wants to try our Soup’n Stew…it’s available online too.

Hi! You’re welcome. I’ve found that the Herb’N Renewal is also great with fresh butter beans simmered with garlic and onions, a summer time favorite.
